The Gluten-Free Foodie… that’s me! My name is Denise and I’ve been immersed in gluten-free living since my coeliac disease diagnosis over a decade ago. No, I don’t feel deprived – I eat very well indeed, thanks for asking! How have I managed to do that? The answer is simple. I cook and bake for myself from scratch and my body thanks me for it.
The availability of gluten-free products has greatly improved in recent years and most supermarkets now carry a range of gluten-free foods. But let’s face it, most gluten-free substitute food products still fall short of our expectations with respect to taste, texture and nutritive value and the majority of ingredient lists still read like laboratory inventories.
In my mind, if your intention is to be well while eating gluten-free, you must be able to cook and bake for yourself. Or have somebody else cook and bake for you… Lucky you! Seriously you should be able to fend for yourself! Cooking is a very valuable life skill you know… really, it is! Anybody can learn to cook. If you can read, you can learn to cook. And the secret to becoming a good cook, like anything else, is plenty of practice. Hopefully some of my recipes will inspire you to have a go at gluten-free cooking and baking.
I suppose, you might say, that I approach the issues related to gluten-free living from a unique perspective. My background is in culinary arts and I have years of professional experience working in restaurant and hotel kitchens both here in Ireland and abroad. I have also run my own gluten-free bakery. Consequently, I’ve an in-depth understanding of food and food ingredients and the inherent challenges faced when wheat, barley and rye are omitted from cooking and baking.
However, there’s more to gluten-free wellness than just banishing gluten.
You see, I’ve another string to my bow. I was the first graduate of the B.A. in Culinary Arts Honours Degree programme from Dublin Institute of Technology to be awarded with a Ph.D. I have an insatiable hunger for knowledge and these days I’m especially interested in food as medicine and the role nutrition plays in maintaining health and preventing disease. Like Einstein, the more I learn, the more I realise how little I actually know. My research has taught me that it’s up to each individual to take charge of their own health and wellbeing.
So while I tantalise your tastebuds with delicious gluten-free recipes, I hope to incite your appetite for knowledge and learning to empower you to take responsibility for your own gluten-free wellness.
